Colourful healthy couscous salad



Ingredients---

1 cup couscous
1/2 cup red and green capsicum
1/2 cup onion
1/2 cup zucchini
2 tsp olive oil
1 tsp salt
2 garlic cloves
1/4 tsp cinnamon powder
1/2 tsp haldi
1 tsp pepper powder
1 tsp coriander powder
1/2 tsp jeera powder
1/2 lemon juice
2 tsp olive oil
1/2 cup kishmish
1.25 cup hot water
1/2 cup grated carrot
1/4 cup mint and coriander leaves
1/4 cup kabuli chana
1/4 cup pomegranate seeds
1/4 cup almond flakes

Method----

Chop onion,bell peppers,zucchini and place them in baking tray
Add salt and olive oil
Mix oil salt in veggies with fingers
Bake them for 10 min. At 180 degree
Add cinnamon powder,coriander powder,jeera powder,haldi,pepper powder,olive oil,lemon juice and minced garlic cloves
Mix all of them and add couscous and kishmish
Add hot water and cover bowl with cling
Cover it for 20 min.
Then mix with fork
Now add carrot,veggies,chana and mint coriander leaves
Mix and toss all finely
Then add pomegranate pearls and almond flakes
Our healthy,nutritious one pot salad is ready to serve
