Bakes cheesy palak handvo muffins


👯Handvo is a popular dish which is very very yummy and delicious.Everyone knows how to make it so I am not here to tell about it's recipe but I am here with this dish because I made it baked and cheesy.some more health as spinach and other vegetables are already in it.i serve handvo with salad and green chutney

👯Ingredents-----
1 cup palak puree
1 cup rice
1/2 cup chana daal
1/4 cup moong daal
1 tbsp urad daal
Salt
Haldi
1 tsp Red chilli powder
1/2 cup curd
1 cup grated lauki
1 cup grated carrot
2 green chilli
1 tsp ginger paste
1 lemon juice
👯Tadka----
1 tbsp oil
1 tbsp mustard seeds
1 tbsp chana
7-8 curry leaves
Hing
1 tbsp white sesame seeds
1/2 cup Grated cheese
Salad and chutney for serving and topping

👯Method----

Soak rice and all daals overnight and grind them next day along with green chilli and ginger

Keep the batter covered for 6-7 hours

Then add palak puree and curd

Add grated vegetables and spices

Squeeze lemon juice and mix all of them

👯Now make tadka----

Heat oil and add mustard seeds and hing

Add chana daal and curry leaves

Add tadka in batter

Check consistency and mix water if required

Now preheat ovan

Add eno 1 sachet and mix

Pour 1 tsp batter in cupcake mould and add cheese then cover it with batter

Prepare all cupcakes like that

Bake for 20 min.at 180 degree

Let them cool

Add chutney on it

And add salad and tadka

Enjoy healthy handvo muffins
