Strawberry chia seeds linzer cookies
Ingredients--
For jam----
1/2 cup strawberries
1/4 cup sugar
1 tsp lemon juice
1/2 cup strawberries

Cookies---
1/2 cup flour
1/2 cup almond flour
4 tbsp softened butter
1/4 cup sugar
Pinch of salt
1/4 tsp of lemon zest
1/2 tsp vanilla essence
1.5 tbsp chia seeds
1/2 egg
1/2 cup flour
1/2 cup almond flour

Method--
Add strawberry sugar and lemon juice in pan and cook for 10 min.
Stir continuously until thickened
Then keep in freeze
For cookies add flour and almond flour
And mix
In a bowl cream together butter,salt,lemon zest and vanilla and cream till fluffy
Add chia seeds and beat
Add egg and beat
Now pour in flour mix and fold it
Wrap dough in plastic wrap and keep in freeze for 1 an hour
Preheat ovan
Dust surface and roll out dough to 1/4 inch thickness
Cut with round cookie cutter
Keep half rounds as it is and cut half rounds with small cookie cutter
Then bake all cookies for 13-14 min.
Let cool them
To assemble spread 1 tsp jam on whole cookies and top with cut-out cookies
