South Indian platter

Presenting south Indian platter.lot of dishes are coming in mind but our paryushan parv are going on so there are very least person to have these dishes. I am giving three recipes of my innovative  dishes which are different from regular south Indian dishes because we all know to make idli dosa battar,sambhar and chutnies.Hope you will love them.

🌹Dishes in platter are--

Net Dosa
Mini Idli
Coconut cheese paniyaram
Fruity khatta meetha  dhokla
Mini uttapam
Sambhar
Coconut chutney
Red chutney
Green chutney
Vermicelli pulao
Khatta meetha poha
Vegetable  upma
Vermicelli  payasam
Gulab jamun in pineapple rose rabri
Mini kerela parantha
Sukha aaloo

🌹1. Coconut cheese paniyaram--

🌹Ingredients--

1/2 cup idli dosa battar
2 tbsp coconut powder
1 cube of cheese
Salt to taste
1/2 tsp pepper powder
For tempering--
1 tbsp oil
1 tsp mustard seeds
5-7 curry leaves

🌹Method--

Take battar in bowl
Add coconut powder salt and pepper
Grate cheese and mix all of them
Heat appe pan and grease
Pour battar and make paniyaram by adding oil
Cook from both sides
Prepare tempering and temper paniyaram

🌹2. Fruity khatta  meetha Dhokla---

From idli dosa battar we use to make khatta dhokla but here is a twist in it.I layered them with watermelon .crunch of watermelon  alongwith softness of dhokla tastes Devine.

🌹Ingredients--

1 cup idli dosa battar
1 tsp ginger paste
Salt to taste
1/4 tsp baking soda
1 tsp eno
2 thick slices of watermelon
1 tsp chaat masala
For tempering--
1 tbsp oil
1 tbsp mustard seeds
10 curry leaves
Scoop of watermelon  for garnish
Coriander leaves

🌹Method--

Take battar add salt and ginger paste
Add baking soda and lastly add eno and 1 tsp water
Grease dhokla tray
Pour battar in  it in thin layer and cook in steamer
When dhokla ready let it cool
Then cut in small rounds with cookie cutter
Cut watermelon  also in  same size with cookie cutter
Now first take one dhokla round top with watermelon
Sprinkle  chaat masala
And cover with other piece of dhokla
Prepare all dhokla like that
Now make tempering  and temper prepared dhokla
Garnish with watermelon  scoop and coriander leaves

3. 🌹Gulab jamun in pineapple rose rabri---

Gulab jamun are very much liked in south India.I am also serving them with an innovation.

🌹Ingredients--

1/2 liter milk
1/2 cup milkmaid
2 tbsp pineapple crush
1 tbsp rose syrup
1 tsp cardmon powder
1 tbsp mix nuts powder
4 gulab jamun
Silver foil for garnish
Some nuts for topping

🌹Method--

Boil milk when it become thick add milkmaid stir it coniniously
Add cardmon powder and nuts powder
Turn off gas
let it cool
Then add pineapple crush and mix finely
Pour it in serving bowl
And keep in freeze for set
Then add gulabjamun
Garnish with silver foil and nuts
Serve cold
